- 1. Cook skinned yams until tender.
- 2. Put between two sheets of wax paper, use rolling pin to flatten, remove one sheet of wax paper, turn the other sheet onto the screen, take a pizza roller or a spatula and score into cubes.
- 3. Put into Excalibur to dehydrate.
- 4. I salted one sheet of yams to see how they would taste as chips. The others will be bagged and stored away to use as mashed potatoes later by reconstituting.
