Tomatoes (Plum / Roma) Dried

You'll love making your own dried tomatoes. Plus, you save a lot of money compared to store bought. Be sure to dry tomatoes enough, they'll be firmer than store bought. If you leave them soft, they will spoil quickly.

  1. Cut Tomatoes lengthwise.  Into 8 to 12 wedges each.
  2. Place skin side down on drying trays. Load trays into Excalibur.
  3. Dry at 130F for 20 to 24 hours.
  4. Tomatoes are dry when the tomato wedge feels dry and is slightly pliable.  No sign of moisture should be inside the tomoto when broken open.
