Whenever possible, soak and dehydrate nuts with dark skins prior to using them. This removes the bitterness that is locked in the skin and make them easier to digest. The Excalibur dehydrator is perfect for this.
For the recipes with pecans, make sure you have soaked and dehydrated the pecans in advance. After soaking, dehydrate them overnight to return them to their crunchy state.
